Our story

 

Hazelnut Pâtisserie is a partnership between two friends who met a few years ago while working at The Fife Arms in Braemar. They share the love of the great outdoors, food and wine so they hatched a plan to bring something new and exciting to their beloved village.

MATHILDE

Mathilde Lacourière is a young classically-trained French pastry chef. She moved to Scotland in 2015 and fell in love with the landscape and lifestyle of the Highlands. She has already worked for some of the area’s most renowned establishments including Prince Charles’ Rothesay Rooms in Ballater and The Fife Arms in Braemar.
She came to Scotland with the dream of opening a pâtisserie. Little did she know it would be in the beautiful village of Braemar with her very good friend Ros. Happy days!

ROS

Ros Evans moved to Braemar 20 years ago with her now husband, Dave. In between raising two children, Ros and Dave opened Taste, a popular café and deli which is now housing Hazelnut. Ros was part of the opening team of the award-winning Fife Arms Hotel in Braemar, as the hotel’s ghillie and is now the friendly face who will welcome you through our door. She is a master coffee maker and Mathilde’s (not so) little pastry padawan.
